Most of the protein in the bars comes from high-quality cricket flour, which is also a source of quality fats, fiber, and micronutrients such as vitamin B12 and iron. We added sweetness by using chicory fiber, which contains no sugars but really only fiber (the only downside is that it can be laxative in large quantities). We further tuned the texture with nuts and small amounts of different types of plant proteins to enrich the amino acid spectrum. Maximum taste, minimum bad.
