Did you know that cricket flour can be used in almost any recipe to makes it more nutritious? It has many uses in the kitchen and the best thing about it is that it doesn’t have a big effect on the taste of the finished meal. We believe it will become a common item in every modern household. If you want to start experimenting, here are a few tips.

Cricket flour has no taste

For a lot of people the idea of eating bugs doesn’t feel right, but funnily enough, taste might be one of the biggest advantages of insect flours. For example cricket flour is quite easy to disguise within a recipe. When combined with other real foods you won’t even know it’s there.

Baking with cricket flour

Cricket flour has a fairly high protein content which means you have to add other flours to create a mixture before baking. Good options are flours that contain a lot of starch or fibre. For example tapioca flour, coconut flour, or any other gluten-free flours mixed with cricket flour will work nicely. The ratio varies among recipes, but cricket flour usually won’t make up more than a quarter of the mix.

Recipe: Cricket flour pancakes

If you want to try something quick, easy, and tasty, these pancakes won’t disappoint!

Ingredients

  • 1 banana
  • 3 eggs
  • 1 tbsp cricket flour
  • 3 tbsp tapioca

Directions

  1. Mix all ingredients in a blender until smooth pancake dough forms. If it’s too watery, don’t hesitate to add tapioca.
  2. Fry in a pan with a little heated oil or butter of your choosing. Keep the pancakes fairly small.
  3. Serve dressed with berries, melted chocolate, coconut flakes, or anything that sounds tasty to you.

Very good, fruity and refreshing!

These bars are very fruity, without any chocolate base or layer. I think they are perfect for summer snacks!

Good, like them, even though I still don't feel the nutrition value

The problem is that even after eating them with only a bit of cheese and some sauce, I am still thinking to eat something else. I guess the problem is that it takes around 20 min to find out I have eaten enough, so I should start eating them by sticks or one by one:-). But anyway they are fine, mostly taste like whole grain pasta with a bit of lens. Better than some whole grain pasta, I had.
